Recipes Recipes Recipes!

I can't wait until easter! I'm going to make salad and this potato cheeser bake thing
Im going to put tofu in the salad and get my very carnivorous cousin to eat it! (mwa-ha-ha-ha-ha-ha-ha-ha-ha-ha). AAAAAAAAANYWAY......I have a whole load of recipes I want to share with you so here are some that I've used and that I really like:


Fried Rice And Tofu
Oil (vegetable, olive whatever you want)
2 eggs, beaten
tofu
1 cup onions
1 cup chopped scallions
1 cup peas (or beans)
4 cups of brown rice
soy sauce
pepper or any other spices that you wish to use.

In a skillet heat 2 table spoons of oil until hot then reduce heat to medium and add eggs and tofu. Stir lightly until eggs are almost set then remove from pan and set aside. In the same pan heat vegetables(you can use different vegetables from the ones I have listed if you wish) for about two minutes. Add rice and stir fry for about 3 minutes. Then add egg mixture and peas. Gradually add soy sauce and spices.

Peanut Butter-Oatmeal Muffins
1 cup flour
1 1/2 teaspoons of baking soda
1/4 teaspoon powdered mace
1 cup oats
3/4 cup milk
1 egg beaten
1/3 cup chunky peanut butter
1/3 cup honey
1/4 cup safflower oil


1. Preheat Oven to 400 degrees
2 Oil enough muffin tins for 10 muffins
3. In a large bowl mix flour, baking powder, oats and mace.
4. In another bowl combine milk, egg, peanut butter, honey, and oil. Add to the dry ingredients, stir until moistened.
5. Spoon mixture into muffin tins
6. Bake for 20 to 25 minutes.
Serve with butter (otherwise their kinda bland)

2nd day. Junk Food Overload!

I ate WAY too much junk food today. Is that okay for a vegitarian?  I don't know. Two peices of chocolate mousse(did I spell that right?) cake and a bowl of moose tracks ice cream. Yum but not healthy. I also didn't get a lot of fruits and veggies in either which I KNOW isn't good. Tomorow I'm going shopping with my mom for vegitarian food. I want to make veggie fritatta, egg drop soup, peanut butter oatmeal muffins and chilled cucumber soup. I don't think many people read my blog but if anyone does, do you have any suggestions? Any good-tasting vegitarian ideas would be great, I'm open to all ideas. I'll try the recipes and definetly give you them if their any good.

No Longer A Carnivore

Very recently (yesterday actually) I decided to be a lacto-ovo fish-eating vegatarian. Today I have put it in action. So I am now the only vegatarian in my family. And let me tell you, it is not easy. I was doing fine, pancakes for breakfast, a spicy garden salad and a tuna salad sandwich for lunch, until dinner that is. My father, who is not very happy about my being a vegetarian, made chicken for dinner (bum bum buuuuummmmm). Here is where I was faced with a dillema. So I scrounged my freezer for something remotely vegitarian. Luckily, there were left over fish sticks I got lucky.
So this blog, from now on will be an account on becoming vegitarian. I was looking through my mothers extensive collection of cookbooks and finally found a cook book, The New American Vegetarian Menu Cookbook. I looked through it to find some AMAZING recipes. I mean everything sounded delicous and I will definetly try them. This week is my spring break so it gives me time to try cooking all the recipes. On this blog, I will document all the recipes I try and how good they are.
